SPAGHETTI SQUASH WITH HOMEMADE MARINARA

INGREDIENTS

1 medium Spaghetti Squash
1 cup fresh basil
1 large glove garlic
½ cup olive oil
salt & pepper to taste
1 container cherry tomatoes

INSTRUCTIONS

  1. Preheat oven to 400 Degrees. Cut the squash in half (length wise) and remove the middle seeds.  Place the squash (cut-side down) on a baking dish. Add water to the dish until the squash has ¼ inch covered.
  2. Bake for 30-40 minutes until the squash is fork tender.
  3. Heat a skillet on medium heat and add sliced garlic. Stir garlic for 1-2 minutes, then add cherry tomatoes. Continue stirring so garlic doesn’t burn.
  4. Once the tomatoes blister (2-3 minutes) begin pushing down and squishing tomatoes to form sauce. Add salt and pepper and chopped basil.
  5. Continue simmering sauce and breaking down tomatoes for 3-5 minutes.
  6. Scoop over squash and serve.
